fer ozz... a lovely lemony digestivo

limoncello is a wonderful after-dinner drink from the island of capri in the bay of naples. one can also make an assortment of cocktails and desserts like cheesecake and granita with it.

here's the recipe:

the zest of 10-12 lemons
1 liter vodka
1½ cups sugar
1 cup water

place vodka and zest in a sealable jar, like a mason jar and allow to sit in a cool, dark place for at least 7 days. at least 7 days later, place the sugar and the water in a saucepan and bring to a boil. allow to cook 5 minutes, remove from heat and allow to cool. add simple syrup to the vodka mixture and allow to stand overnight. strain through a layer of cheesecloth in a conical sieve, pressing the solids firmly. strain again through a second layer in the same manner. chill and allow to stand 1 week.

serve very cold. we keep our jar of it in the freezer.

Now, I know I've met you before around the blogosphere, but I can't remember when or where!

On the limoncello: I bought a bottle of the real thing, once, and thought it tasted like Lemon Drops candy. Not what I wanted. I'll bet your recipe is a distinct improvement. I'd be inclined to add the syrup a little at a time, though, since the other thing I disliked about limoncello was the sweetness.
